Banana Coconut Chia Pudding
When I’m working on keeping my diet clean but sometimes want a “dessert”, this is one of my go to snacks. Super easy to make, no added sugar and loaded with vitamins. Enjoy!
Ingredients:
2.5-3 large ripe bananas
18 oz unsweetened canned organic coconut cream (not coconut milk)
1.5 tsp vanilla extract
0.5 tsp lemon juice
1 small pinch of salt
6.5 Tbs of chia seeds
(optional) 3 Tbs unsweetened coconut flakes
Instructions:
Combine ripe banans, coconut cream, vanilla and lemon juice and salt in blender. Puree until smooth, about 1 minute. Then add the chia seeds. Blend on low to combine all ingredients. Chill for 4 hours. Top with unsweetened coconut flakes when you serve it.
Makes 6-8 servings.
