Banana Coconut Chia Pudding


Banana Chia Pudding

after dinner goodness

When I’m working on keeping my diet clean but sometimes want a “dessert”, this is one of my go to snacks. Super easy to make, no added sugar and loaded with vitamins. Enjoy!


  • 2.5-3 large ripe bananas

  • 18 oz unsweetened canned organic coconut cream (not coconut milk)

  • 1.5 tsp vanilla extract

  • 0.5 tsp lemon juice

  • 1 small pinch of salt

  • 6.5 Tbs of chia seeds

  • (optional) 3 Tbs unsweetened coconut flakes


Combine ripe banans, coconut cream, vanilla and lemon juice and salt in blender. Puree until smooth, about 1 minute. Then add the chia seeds. Blend on low to combine all ingredients. Chill for 4 hours. Top with unsweetened coconut flakes when you serve it.

Makes 6-8 servings.
