Brownie Bliss Balls

OK so here’s a great go to recipe (that I invented!) if you’re trying to eat clean and don’t want to load up on sugar and junk. These little bliss balls are sweet and tasty without added sugar. They use dates to make them sweet so I like to stick to just one per day. These are also great to use instead of highly processed energy bars - yuck! Feel free to add other types of nuts. Sometimes I mix in some brazil nuts to get a good daily dose of selenium. Enjoy!

Ingredients:

  • 1/2 cup organic raw almonds

  • 1/4 cup raw cashews

  • 2 tsp toasted coconut (I bought “coconut smiles” organic from Natural Grocers, chopped it up in food processor, then baked it for about 10 minutes on 300 degrees til lightly toasty on top). watch these closely as you don’t want them to burn!

  • 1 Tbs ground cocoa (no sugar, pure cacao)

  • 2 tsp Navitas Organic cacao nibs

  • 9 large organic pitted dates

  • 3 Tbs Artisana Organics coconut butter (this is different than coconut oil!)

Instructions:

Mix all the dry stuff (nuts, coconut and cacao) in the food processor until it’s fine like sand. Then add in the dates and the coconut butter. Mix until about the consistency of cookie dough.

Roll into balls a little smaller than a ping pong ball. Should make about 14 balls.

(optional) On a sheet spread out some toasted coconut, and crushed cacao nibs

(optional) Roll the balls over that spread to add some crunch to the outside of the balls

cover and put in fridge

Makes 14 balls. about 82 calories/ball (don’t quote me on that!)
